Sunday-project short ribs collapsed into a red wine ragu over wide ribbons.
Quantities scaled from the original (6 servings).
Tick ingredients off as you gather them.
Brown the ribs hard in the oil; remove.
Soften the vegetables; add garlic and puree, then wine, tomatoes and bay.
Return the ribs; cover and cook at 150C fan for 3.5 to 4 hours.
Pull the meat, discard bones, skim the fat; reduce if needed.
Toss with pasta; Parmesan and gremolata over.
