Method

  1. Step 1

    Soften the leeks in the oil for 8 minutes; add garlic and cumin for 1 minute.

  2. Step 2

    Wilt in the spinach with the herbs.

  3. Step 3

    Nestle in spoonfuls of tofu; cover and warm through 4 minutes.

  4. Step 4

    Season, scatter nutritional yeast, squeeze the lemon, and serve with sourdough.
