Method

  1. Step 1

    Soften the onion in the oil; add garlic, then the rice for 2 minutes.

  2. Step 2

    Add wine if using; let it absorb.

  3. Step 3

    Add stock a ladle at a time, stirring, about 20 minutes.

  4. Step 4

    Stir in prawns and peas for the last 4 minutes until the prawns are pink.

  5. Step 5

    Finish with lemon, butter, Parmesan and chives.
