  1. Step 1

    Toast the pitta pieces until crisp.

  2. Step 2

    Griddle the halloumi in the oil until golden.

  3. Step 3

    Toss vegetables and herbs with extra virgin oil, lemon and half the sumac.

  4. Step 4

    Pitta and halloumi in last; remaining sumac over.
