Method

  1. Step 1

    Roast the tomatoes and beans in oil and oregano at 200C fan for 18 minutes until bursting.

  2. Step 2

    Stir lemon zest and plenty of pepper through the cottage cheese.

  3. Step 3

    Spoon the cheese into bowls, top with the hot tomatoes and beans, and finish with basil.

  4. Step 4

    Serve with toast for scooping.
