A whole bream baked over clementines, fennel and bay; five minutes of effort, restaurant result.
Quantities scaled from the original (2 servings).
Tick ingredients off as you gather them.
Heat the oven to 190C fan. Toss fennel in half the oil in a baking dish.
Stuff the fish with clementine slices and bay; slash the skin, oil and season.
Sit on the fennel; add wine and clementine juice.
Bake 25 to 30 minutes until the flesh lifts from the bone.
Serve with potatoes, watercress and the pan juices.
