Method

  1. Step 1

    Soften the leeks in oil and butter; add garlic.

  2. Step 2

    Add cider; bring to a rolling boil.

  3. Step 3

    Tip in the mussels; cover and steam 4 to 5 minutes until opened (discard closed ones).

  4. Step 4

    Stir in creme fraiche and parsley.

  5. Step 5

    Bowls, bread, and the pot in the middle.
