A crown rubbed under the skin with lemon-herb butter, roasted juicy with make-ahead gravy.
Quantities scaled from the original (8 servings).
Tick ingredients off as you gather them.
Loosen the skin; spread the herb-lemon-garlic butter underneath and over.
Sit the crown on the vegetables; roast at 180C fan, 20 minutes per kg plus 20, to 70C in the centre.
Rest 30 minutes under foil.
Skim the tray, stir flour into the juices, then wine and stock; simmer to gravy.
Carve; serve with your sides.
