The Sunday-night pot: whatever greens remain, blitzed silky with beans, garlic and lemon.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Soften the onion and leek in the oil; add garlic.
Add potato and stock; simmer 10 minutes.
Add beans and greens; simmer 5 minutes, keeping the colour.
Blitz smooth with lemon zest and juice.
Serve swirled with yogurt and scattered seeds.
