Tempeh and broccoli roasted until crisp, dressed in a lime-peanut satay sauce.
Quantities scaled from the original (2 servings).
Tick ingredients off as you gather them.
Toss tempeh and broccoli in oil and soy; roast at 200C fan for 22 minutes until crisped.
Cook the rice to packet timings.
Whisk peanut butter, lime, maple, chilli and warm water into a pourable sauce.
Serve the traybake over rice, drenched in satay sauce.
