Ancient-grain spaghetti in a tomato-bean sauce with a teaspoon of nduja doing the heavy lifting.
Quantities scaled from the original (2 servings).
Tick ingredients off as you gather them.
Cook the spaghetti; save a cup of water.
Melt the nduja in the oil with garlic for 1 minute.
Add tomatoes and beans; simmer 10 minutes.
Toss with the pasta and a splash of water; finish with basil and Parmesan.
