Method

  1. Step 1

    Soften the leeks in oil and butter for 6 minutes.

  2. Step 2

    Add potatoes, milk, stock and bay; simmer 15 minutes.

  3. Step 3

    Add haddock and corn; poach 5 minutes and flake the fish through.

  4. Step 4

    Season with pepper (the fish salts it); chives and bread to serve.
