Method

  1. Step 1

    Cook and cool the soba.

  2. Step 2

    Whisk soy, vinegar, sesame oil, ginger and maple; divide between two jars.

  3. Step 3

    Layer in carrot, edamame, cucumber, tofu and soba.

  4. Step 4

    Shake over the noodles when it's time to eat; scatter with sesame.
