Method

  1. Step 1

    Whisk peanut butter, soy, lime, honey, chilli and coconut milk. Reserve half as sauce; marinate the chicken in the rest for 15 minutes.

  2. Step 2

    Toss cucumber and onion with vinegar and sugar.

  3. Step 3

    Thread the chicken onto skewers and grill or griddle 10 to 12 minutes, turning.

  4. Step 4

    Serve with the reserved sauce and the pickled cucumber salad.
