Method

  1. Step 1

    Soften the onion in the oil, add spices for 1 minute.

  2. Step 2

    Add the beans with their liquid; simmer and roughly mash for 5 minutes.

  3. Step 3

    Make wells, crack in the eggs, cover and cook 5 to 6 minutes.

  4. Step 4

    Top with avocado, lime, coriander and hot sauce; serve with tortillas.
