Method

  1. Step 1

    Soften the onion; add garlic, ginger, puree and spices for 1 minute.

  2. Step 2

    Add sweet potato, tomatoes, peanut butter and stock; simmer 25 minutes.

  3. Step 3

    Wilt in the spinach; season and add lime.

  4. Step 4

    Serve over rice with peanuts and coriander.
