Method

  1. Step 1

    Cook the rice.

  2. Step 2

    Fry the kimchi in the oil 3 minutes; add gochujang if using, garlic and mushrooms for 3 more.

  3. Step 3

    Add stock and soy; simmer 10 minutes.

  4. Step 4

    Slide in the tofu; simmer 3 minutes.

  5. Step 5

    Finish with sesame oil, spring onions and the fresh kimchi on top. Serve with rice.
