A deep Spanish tortilla of new potatoes and wild garlic; warm for dinner, cold for tomorrow's lunch.

Gently fry the potatoes and onion in the oil, covered, 15 minutes until tender; drain, keeping 1 tbsp oil.
Beat the eggs; fold in potatoes, onion and wild garlic. Rest 5 minutes.
Cook in the reserved oil over low heat 8 minutes; invert with a plate and cook 4 more.
Rest 5 minutes; serve warm with salad.
