Method

  1. Step 1

    Boil celeriac and potato 20 minutes; mash with oil and season.

  2. Step 2

    Soften leeks in butter; add flour, then milk gradually, to a sauce. Add mustard and parsley.

  3. Step 3

    Fold in all the fish; tip into a dish.

  4. Step 4

    Top with mash and cheddar; bake at 200C fan for 30 minutes until bubbling.
