Five-a-side turkey mince stir-fry spooned into crisp lettuce; fast, light and very high in protein.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Heat the oil in a wok and fry the turkey hard, breaking it up, until browned; about 6 minutes.
Add ginger, garlic and pepper and stir-fry 3 minutes.
Add water chestnuts, soy and sesame oil; bubble 2 minutes.
Stir through spring onions.
Spoon into lettuce leaves and serve with lime.
