Eggs baked into a rich pepper and tomato pan with butter beans; brunch that behaves like lunch.

Tick ingredients off as you gather them.
Soften the onion and pepper in the oil for 8 minutes.
Add garlic and spices for 1 minute, then tomatoes and butter beans; simmer 10 minutes until thick.
Make four wells and crack in the eggs. Cover and cook 5 to 6 minutes until just set.
Scatter with parsley and serve with warm pitta.
