The Tuscan bean-and-bread soup: cavolo nero, cannellini and stale sourdough simmered thick.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Soften onion, carrot and celery in the oil for 10 minutes; add garlic and rosemary.
Add tomatoes, both lots of beans and stock; simmer 20 minutes.
Add cavolo nero for 10 minutes, then the bread for 5 until thick enough to stand a spoon.
Rest 10 minutes; finish with good oil.
