    Cook the orzo; drain and rinse briefly.

  2. Step 2

    Whisk lemon, oil and garlic.

  3. Step 3

    Toss orzo, chicken, olives and spinach in the dressing while warm.

  4. Step 4

    Fold through the herbs; season boldly. Keeps 3 days chilled.
